p5e3 memory upgrade

if this question has been ask else where please accept my apologies and I will delete it.
I want to up grade my memory from 2 gigs(ddr3 1333) to 8 gigs(ddr3 1600) and the QVL only seems to cover 2 gigs of memory at a time no matter how fast the memory is. Will this be over kill ?.........will there be problems with that much memory I'm not aware of ? Should I consider not using vendors that are not on the list? I know they must be matched pairs. I'm not a gamer but I would like to keep that option open . However I do like to have 4 or 5 things going at once...torrents, dvd burning,movie ripping and rendering, photoshop and two monitors at the same time. My specks are below.....thanks in advance for all help.

asus p5e3 ( max of 8gigs 800- 1800(oc))
q6600 processor with power stepping
xp 64 bit pro
750w power
ati 3870 video card
150 gig raptor drive
