The two volumes of the second edition of Malting and Brewing Science I, Malt and Sweet Wort and II, Hopped Wort and Beer, by James S. Hough, Dennis E. Briggs, Roger Stevens and Tom W. Young, appeared in 1981 and 1982. This book provided the framework for the M.Sc. in Malting and Brewing Science, the course that was offered by the British School of Malting and Brewing in the University of Birmingham(UK). It also provided the backbone of many other courses. After more than 20 years the demand for these volumes has continued, although they are increasingly out of date. Malts and Malting, by Dennis E. Briggs, appeared in 1998, and Brewing Yeast and Fermentation, by Chris Boulton and David Quain, became available in 2001. These books cover their named topics in depth. However, the need for an up-to-date, integrated textbook on brewing, comparable in scope and depth of coverage to Malting and Brewing Science, remained.

A world without nuclear weapons
A nuclear-free world may never come about, but there can be safety in trying:
The market’s self-correction will not be enough, however. Higher taxes will eventually be inevitable, since so many governments have lurched heavily into deficit. But politicians must tread carefully. Tax rises right away would be a rotten idea, since for the moment fiscal stimulus is needed. And even when governments raise the money, they should first get rid of deductions and reverse unmeritocratic measures (such as George Bush’s repeal of America’s death tax) rather than jacking up income-tax rates to punitive levels. Squeeze the rich until the pips squeak, and the juice goes out of the economy.
As for heads-I-win capitalism, the problem of asymmetric risk should shrink, because the rule changes needed to make the financial system safer will also remove unwarranted profits. Contra-cyclical capital requirements, forcing banks to build more reserves during good times, will leave them less cash to splurge on bonuses. Many of the sweetest sources of profit sprang up in the cracks between regulatory systems; governments are now filling in these gaps. If central banks focus on asset markets when they rise as well as when they fall, they will remove much of the froth. Treat a bank that becomes too big to fail like a utility, and it will make less money.
Curbing the excesses of wealth, then, will be a side effect of regulations designed to make capitalism work better. Such measures will not provide the lyrics to revolutionary anthems, but they are going to be better than going after the wealthy. The rich are an easy target. But when you try to bash them, you usually end up punching yourself in the nose.

DEMYSTIFYING THE DIRECT AND INDIRECT COOKING METHODS
The Direct Method
Food is placed directly above the heat source and must be turned once halfway through the cooking time to expose both sides to the heat.
The Direct Method can be done on any grill but works best with the grill lid closed during cooking.
If using a charcoal grill to make grilled pizza, use only one layer of briquets and wait until the briquets have burned down to a medium heat before grilling the dough.
The Indirect Method
Foods are cooked by reflected heat, similar to a convection oven.
This method can ONLY be used on a covered grill.
With the Indirect Method, food is placed between the heat source - never directly above lit gas burners or charcoal.
Remember, indirect cooking is a no-peek cooking method — every time you lift the lid, heat escapes and increases cooking time.
The Direct/Indirect Method
The combination of direct and indirect heat is the best method for grilling pizza.
Use direct heat for any toppings that need to be pre-grilled.
Continue using direct heat to cook the first side of your pizza crust.
To finish pizza, move to indirect heat which will allow the crust to brown and crisp and cook through as the cheese melts.

About the Author
Steve Sinchak is an entrepreneur who has started several technology-related businesses.
Steve is currently running a web development firm known as Advanced PC Media LLC, which owns and operates several Web sites geared toward computer enthusiasts.
In addition to writing for his Web sites and running Advanced PC Media LLC, he works as a Systems Engineer for a Global 100 company in the financial services sector.
Steve has been working with computers for more than 15 years.
Starting with a desktop that had a 286-based processor, 1MB of RAM, and Windows 3.1, he taught himself how to make Windows run faster on the slow hardware.
Driven by a strong curiosity to understand how Windows works, he spent countless hours researching and experimenting with its inner workings and features. Over the years, he has worked closely with all versions of Windows.
In 2005 and 2006, Microsoft honored him with the Most Valued Professional (MVP) award for his work with Windows and his contributions to the Windows community.

Going for the bankers is tempting for politicians?and dangerous for everybody else:
The market’s self-correction will not be enough, however. Higher taxes will eventually be inevitable, since so many governments have lurched heavily into deficit. But politicians must tread carefully. Tax rises right away would be a rotten idea, since for the moment fiscal stimulus is needed. And even when governments raise the money, they should first get rid of deductions and reverse unmeritocratic measures (such as George Bush’s repeal of America’s death tax) rather than jacking up income-tax rates to punitive levels. Squeeze the rich until the pips squeak, and the juice goes out of the economy.
As for heads-I-win capitalism, the problem of asymmetric risk should shrink, because the rule changes needed to make the financial system safer will also remove unwarranted profits. Contra-cyclical capital requirements, forcing banks to build more reserves during good times, will leave them less cash to splurge on bonuses. Many of the sweetest sources of profit sprang up in the cracks between regulatory systems; governments are now filling in these gaps. If central banks focus on asset markets when they rise as well as when they fall, they will remove much of the froth. Treat a bank that becomes too big to fail like a utility, and it will make less money.
Curbing the excesses of wealth, then, will be a side effect of regulations designed to make capitalism work better. Such measures will not provide the lyrics to revolutionary anthems, but they are going to be better than going after the wealthy. The rich are an easy target. But when you try to bash them, you usually end up punching yourself in the nose.

There was a lot of debate at the time over the root cause. The party line among Detroit auto executives was that the cause was the “Japanese invasion.” Japan, Inc. had banded together with industry and government colluding to set up trade barriers to prevent American cars from being sold in Japan and artificially lowering prices of Japanese cars in the United States. Of course, in the minds of U.S. companies, as long as the root cause was unfair business practices, there was no need to seriously change the way they built cars. Instead, political channels would right the wrongs.
Around this time I was fortunate to be invited by David Cole and Robert Cole (two University of Michigan professors who were leading the study of the Japanese quality movement) to work on a U.S.-Japan automotive study. This research was an effort to help U.S. companies learn from the Japanese automakers. My project focused on how automakers worked with their suppliers on new product development in the U.S. and Japan. The numerous studies that made up the overall U.S.-Japan auto study covered many aspects of the industry, and all the studies collectively pointed to a single conclusion. Whatever was going on with Japan’s government and the value of the yen and other macro-economic factors, Japanese auto companies were very good at engineering and building cars. They were not necessarily financial or marketing whizzes. They were not the leaders in advanced manufacturing technology, at least not in complex automation. They “designed in quality” and built in quality at every step of the process, and they did it with remarkably few labor hours. Not only were Japan’s automakers good, their top suppliers were also world class in engineering and manufacturing, and they worked together as a team.
But even in these early stages of my introduction to the auto industry in Japan, there were indications that Toyota was different from the other Japanese automakers. While the basic product development process seemed similar across the three automakers, and the top tier suppliers were all integrally part of the product development process, there was a sense of partnership between Toyota and its suppliers that we did not see as strongly in the keiretsu of Mazda and Nissan.

I hate black boxes. One of my goals in writing this book was to illuminate some of those black boxes that are so popular in information security books today. On the other hand, I don’t want to bore readers to death with trivial details (if that’s what you want, go read some RFCs). As a result, I sometimes ignore details that I deem irrelevant to the topic at hand. You can judge whether I’ve struck the proper balance between these two competing goals.
Another goal of mine was to present the topic in a lively and interesting way. If any computing subject should be exciting and fun, it’s information security. Security is happening now, it’s in the news; it’s clearly alive and kicking.
Some security textbooks offer a large dollop of dry useless theory. Reading one of these books is about as exciting as reading a calculus textbook. Other security books offer nothing but a collection of apparently unrelated facts, giving the impression that security is not really a coherent subject at all. Then there are books that present the topic as a collection of high-level managerial platitudes. These books may have a place, but if your goal is to design and build secure systems, you’d better understand something about the underlying technology. Finally, some security books focus on the human factors in security. While it is certainly critical to understand the role that human nature plays in security, I would argue that a security engineer must have a solid understanding of the inherent strengths and weaknesses of the technology before the human factors can be fully appreciated.
